Cauliflower and Watercress Soup
Ingredients
- Butter 2 tablespoons
- Onion 1 head
- Cauliflower 30 oz
- Chicken Broth 2 cups
- Coarse Salt to taste
- Ground Black Pepper to taste
- Watercress 10 oz
Step-by-Step Guide
Step 1
Melt the butter in a saucepan over medium heat. Add the finely chopped onion and sauté until translucent for about 5 minutes.
Step 2
Then add the cauliflower cut into small florets, broth, 2 cups of water, season with salt and pepper. Bring to a boil, cover, reduce heat, and simmer until tender for 15 minutes.
Step 3
Remove from heat and stir in the watercress.
Step 4
Blend the soup in batches until smooth. Then pour it back into the pot.
Step 5
Ladle the soup into bowls and sprinkle with freshly ground black pepper.
