Cauliflower and Parsnip Soup
Ingredients
- Olive Oil 1 tablespoon
- Cauliflower 1 head
- Parsnip 3 pieces
- Onion 2 heads
- Fennel Seeds 1 tablespoon
- Coriander Seeds 1 teaspoon
- Turmeric ½ teaspoon
- Garlic 3 cloves
- Green Chili Pepper 2 pieces
- Ginger 1 teaspoon
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Vegetable Broth 0 qt
- Cilantro to taste
Step-by-Step Guide
Step 1
Heat the oil in a large skillet and add the vegetables.
Step 2
Sauté for 10-15 minutes until soft. In a separate dry skillet, toast the spices with a pinch of salt for a few minutes. Grind to a powder using a mortar and pestle.
Step 3
Add the garlic, chili, ginger, and spices to the vegetables and cook for about 5 minutes, stirring regularly.
Step 4
Add the lemon zest and juice. Pour in the broth. Simmer for 25-30 minutes until all the vegetables are soft.
Step 5
Blend until smooth. If needed, thin with water. Season well, add cilantro and lemon juice to balance the flavor.
Step 6
Serve immediately or refrigerate to reheat later. Serve with crusty bread.
