Catalan Gazpacho
Ingredients
- Black Tomatoes 2 pieces
- Orange Bell Peppers 1 piece
- Orange Bell Peppers 1 piece
- Garlic 2 cloves
- Parsley ½ bunch
- Mayonnaise 1 tablespoon
- Ground Black Pepper to taste
- Salt a pinch
Step-by-Step Guide
Step 1
Cut the tomatoes and bell peppers into several pieces. Prepare the parsley and garlic for blending.
Step 2
Using an immersion blender, combine all the ingredients in a large bowl. Blend until smooth and frothy. Add 1 tablespoon of mayonnaise and continue blending.
Step 3
Taste the finished soup. It should be thick like puree (this can be achieved depending on the type of tomatoes used). Add ground black pepper.
Step 4
Serve with white croutons or baguette toast.
