  • Carrot 20 oz
  • Onion 1 head
  • Rice 3 tablespoons
  • Vegetable Broth 0 qt
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Slice the onion into half rings. Place it in a saucepan, add a little water and salt. Cover with a lid and simmer on low heat for 5 minutes until transparent and soft.

Step 2

Peel the carrot and slice it thinly. Add it to the onion, stir, and sauté for a couple of minutes.

Step 3

Add the rinsed rice, pour in the broth, and bring to a boil. Season with salt and pepper, reduce the heat, and cook the soup for 40 minutes.

Step 4

Blend the finished soup until smooth, add oil, and serve.
