Carrot soup with orange and ginger
Ingredients
- Turnips 6 pieces
- Onion 1 piece
- Ginger 2 tablespoons
- Oranges 1 piece
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Chop the carrots, onion, and ginger, and sauté in a pot with olive oil for 5 minutes. (Grating the carrots will enhance the flavor and darken the color of the soup).
Step 2
Squeeze the juice of the orange into the pot (you can also add the zest) and cook for another 10 minutes.
Step 3
Pour in 750 ml of boiling water and let it simmer on low heat for another 15–20 minutes.
Step 4
Blend until smooth, add salt and pepper to taste, and cook for a couple more minutes.
Step 5
Serve with toast and cheddar cheese or another sharp cheese.
