
Carrot Soup with Mozzarella and Apples

Ingredients
- Carrot 20 oz
- Broth 0 qt
- Mozzarella Cheese 5 oz
- Apple 5 oz
- Ginger 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the carrot and a 3 cm piece of ginger. Cut the carrot into cubes and halve the ginger.
Step 2
Cook the carrot and ginger in the broth for about 20 minutes or until tender. Then remove the ginger, pour a little broth into a glass, and blend the carrot with an immersion blender, adding broth as needed to achieve a creamy soup consistency. Add salt and black pepper to taste.
Step 3
Return the pot to the heat. Add finely chopped mozzarella and stir until smooth.
Step 4
Peel the apple and cut it into small pieces, adding it to the soup a couple of minutes before it's done.
