Ingredients
- Butter 0 oz
- Onion 1 head
- Carrot 25 oz
- Milk 15 fl oz
- Chicken Broth 15 fl oz
- Fresh Mint 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Sour Cream 4 tablespoons
Step-by-Step Guide
Step 1
In a large pot, melt the butter, add the chopped carrots and onion, and sauté for 5 minutes.
Step 2
Add the broth and milk to the pot, cover with a lid, and cook for 15–20 minutes until the vegetables are soft.
Step 3
Blend the soup in a blender, add the chopped fresh mint. The soup can be served hot or cold. Before serving, add a spoonful of sour cream and fresh mint.
