Ingredients
- Butter 2 spoons
- Onion 10 oz
- Curry 1 tablespoon
- Coarse Salt to taste
- Ground Black Pepper to taste
- Chicken Broth 2 glasses
- Carrot 0 lbs
- Meyer Lemon Juice 2 spoons
- Cilantro 2 spoons
Step-by-Step Guide
Step 1
Melt the butter in a saucepan over medium heat. Add the finely chopped onion, curry, 2 teaspoons of salt, and 0.25 teaspoon of pepper. Sauté until softened, about 5 minutes.
Step 2
Pour in the broth and 3 cups of water, then add the peeled and diced carrot. Bring to a boil, reduce the heat, cover with a lid, and simmer for about 20 minutes until tender.
Step 3
Blend the soup in a blender until smooth, adding more water to reach your desired consistency. Add lemon juice to taste and serve, garnished with cilantro.
