Carrot Soup Puree with Aromatic Mousse
Ingredients
- Turnips 3 pieces
- Carrot 10 fl oz
- Butter 0 oz
- Honey 1 teaspoon
- Red Curry Powder a pinch
- Salt to taste
- Cream ½ cup
- Ground Black Pepper to taste
- 20% Sour Cream 2½ cups
- Chopped Sage Leaves 1 teaspoon
- Chopped Sage Leaves 1 teaspoon
- Chervil 1 teaspoon
- Chopped Sage Leaves 1 teaspoon
Step-by-Step Guide
Step 1
For the soup, place the carrots, 150 ml of carrot juice, butter, honey, and curry in a pot and bring to a boil over medium heat. Reduce the heat and cook until the liquid evaporates and the carrots become very soft, about 1 hour. Add the cream, increase the heat to medium, and cook for 3 minutes.
Step 2
Puree the carrot mixture with the remaining 150 ml of carrot juice. Strain the soup through a fine sieve, seasoning to taste with salt and pepper. Cover and chill.
Step 3
For the mousse, whip the sour cream in a bowl with a whisk. Add the chopped chives, parsley, chervil, and tarragon.
Step 4
Pour the soup into bowls and place the mousse in the center.
