- Carrot 30 oz
- Butter 0 oz
- Honey 1 tablespoon
- Chicken Broth 0 qt
- Meyer Lemon Juice 1 tablespoon
- Yogurt powder 5 fl oz
- Black Cumin (Cumin) 2 spoons
- Salt to taste
- Spices 0 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a large pot, melt the butter and sauté the finely chopped onion and carrot over medium heat for two minutes. Pour in the broth and bring it to a boil.
Step 2
Reduce the heat under the pot, cover it with a lid, and simmer the soup until the carrots are very tender. This will take about twenty minutes.
Step 3
Toast the cumin seeds over medium heat until they release a strong aroma, then grind them in a mortar.
Step 4
Remove the soup from the heat, and using a blender, puree it until smooth before returning it to the pot. Add honey, freshly squeezed lemon juice, and allspice. Stir well.
