Ingredients

  • Carrot 20 oz
  • Chicken Egg 4 pieces
  • Dill 1 bunch
  • Cilantro 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste
  • Semi-soft cream cheese 5 oz

Step-by-Step Guide

Step 1

To prepare the roll, take the carrots, eggs, butter (you can use vegetable oil), cream cheese (can be replaced with Philadelphia or feta), cilantro, dill (any of your choice), salt, and pepper.

Step 2

Grate the carrots on a coarse grater. Sauté in butter for 5–7 minutes.

Step 3

Separate the egg whites from the yolks. Whisk the yolks.

Step 4

Mix the yolks with the carrots. Add the whipped egg whites to the carrots. Stir gently from the bottom up. Add salt and pepper to taste.

Step 5

Preheat the oven to 355°F. Line a baking sheet with parchment paper and spread the carrot mixture on it. Place the baking sheet in the hot oven and bake for 15–20 minutes.

Step 6

Meanwhile, prepare the filling for the roll. Wash the herbs, dry them, and pluck only the leaves. Purée the herb leaves in a blender (or chop finely). Combine the herbs with room temperature cheese. Mix thoroughly.

Step 7

Remove the baked carrot layer, flip it onto a new baking sheet, cover with the old sheet and a damp towel. Let it cool.

Step 8

Carefully remove the paper (it comes off easily). Spread the cooled layer with the cheese filling mixed with herbs.

Step 9

Using the paper, carefully roll the roll. Cover with plastic wrap. Chill in the refrigerator for 1 hour.

Step 10

Slice the roll with a sharp knife. Serve as an appetizer for lunch and dinner.
