Carrot Puree Soup
Ingredients
- Turnips 4 pieces
- Onion 1 piece
- 1% Kefir 5 fl oz
- Vegetable Oil 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel and chop the onion. Peel the carrots and cut them into cubes.
Step 2
Heat the vegetable oil in a pan, sauté the onion, stirring quickly. Add the carrots, season with salt, and simmer covered until soft over low heat. If needed, add a little water.
Step 3
Transfer the mixture to a blender, pour in the milk, and blend until the soup has a consistency similar to liquid sour cream (you can reduce the amount of milk if necessary).
Step 4
In the vegan/vegetarian version, omit the milk or replace it with soy milk.
Step 5
When serving, sprinkle the soup with herbs.
