Description
You can make the soup with any broth: meat, vegetable, or just water.
Ingredients
- Chicken Broth 0 qt
- Turnips 10 oz
- Onion 5 oz
- Salad Potatoes 10 oz
- Clarified Butter 0 oz
- Sugar 0 oz
- Butter 0 oz
- Herbs 1 bunch
- Salt to taste
Step-by-Step Guide
Step 1
Wash and peel the carrots and onion, then slice them thinly and sauté in clarified butter.
Step 2
When the carrots become soft, add salt, sugar, a few sprigs of fresh parsley, and slices of peeled, washed, and diced potatoes. Pour in water, cover with a lid, and simmer for 45–60 minutes on low heat.
Step 3
Pass the vegetables through a sieve or grind them through a meat grinder, dilute with broth or cooking liquid, and boil well. Add the butter and serve with croutons.
