Carrot Pudding
Ingredients
- Sugar 10 oz
- Carrot 10 oz
- Milk 0 qt
- Cardamom to taste
- Dried Apricots 5 oz
- Chopped almonds 1 tablespoon
- Raisins 1 tablespoon
Step-by-Step Guide
Step 1
Combine grated carrot with sugar. Place in the refrigerator.
Step 2
Rinse the dried apricots and cut them in half.
Step 3
Add cardamom seeds, removed from the pods, to the milk. Bring to a boil. Cook, stirring, for 45 minutes until the milk reduces by half.
Step 4
Add the dried apricots and the carrot-sugar mixture, and cook over low heat, stirring, until the mixture thickens.
Step 5
Remove the pot from heat and let it cool slightly. Add 1 tablespoon each of raisins and chopped almonds.
Step 6
Cool and serve.
