Carrot Marmalade
Ingredients
- Carrot 20 oz
- Lemon 3 pieces
- Water 15 fl oz
- Sugar 30 oz
- Citric Acid 1 teaspoon
Step-by-Step Guide
Step 1
Grate the peeled carrots on a coarse grater. Wash the lemons. Grate the zest, then squeeze the juice from the lemons.
Step 2
Place the carrots along with the grated zest in a pot, add water, and cook until the carrots are soft. Add the lemon juice, sugar, and citric acid. Cook on low heat for 45 minutes, stirring well (watch to prevent burning!).
Step 3
Transfer to a clean jar and store in a cool place.
