Carrot Cupcakes with Orange Zest
Ingredients
- Carrot 10 oz
- Sugar 5 oz
- Vegetable Oil 5 fl oz
- Egg 2 pieces
- Salt a pinch
- All-purpose flour 5 oz
- Baking Powder ½ teaspoon
- Ground Cinnamon ½ teaspoon
- Baking Soda 1 teaspoon
- Powdered Sugar 5 oz
- Butter 5 oz
- Milk 1 tablespoon
- Orange zest to taste
Step-by-Step Guide
Step 1
In a bowl, combine: 200 grams of sugar, 150 ml of vegetable oil, 2 eggs, and a pinch of salt. Beat with a mixer until the sugar dissolves.
Step 2
Grate 250 grams of carrots and add them to the same bowl, then beat again until smooth.
Step 3
In a separate bowl, sift together: 200 grams of flour, ½ teaspoon of cinnamon, 1 teaspoon of baking soda, and ½ teaspoon of baking powder.
Step 4
Mix all the ingredients together.
Step 5
Preheat the oven to 340°F.
Step 6
Pour the batter into cupcake molds (I do not grease the molds as I use silicone ones that do not stick at all; you can grease them if necessary).
Step 7
Once the oven is heated and we have filled all the molds, bake them for 25-30 minutes. While the cupcakes are baking, we will make the frosting.
Step 8
Take: 100 grams of butter, 200 grams of powdered sugar, and 1 tablespoon of milk. I melted the butter in the microwave (30 seconds) and then mixed it with the powdered sugar and milk using a fork until smooth (if the powdered sugar is not enough, you can always add more).
Step 9
Remove the cupcakes from the oven. Once they cool down, you can decorate them with the frosting (I use a pastry syringe, but you can also use a piping bag).
Step 10
Important! Do not decorate the cupcakes right out of the oven, as the frosting will melt!
Step 11
You can top them with fresh berries, coconut flakes, or special sprinkles. In my case, I decorated with orange sugar and orange zest (I buy orange sugar and zest at a regular supermarket).
