  • Ground Cinnamon 1 teaspoon
  • Salt a pinch
  • Clarified Butter 5 oz
  • Brown Sugar 5 oz
  • Granulated sugar 5 oz
  • Egg white 1 piece
  • Vanilla extract ½ teaspoon
  • Raisins 5 oz
  • Turnips 2 pieces
  • Walnuts 5 oz
  • Semi-soft cream cheese 10 oz
  • Honey 0 oz

Step-by-Step Guide

Step 1

Prepare the flour mixture: in a bowl, mix the flour, baking powder, cinnamon, and salt.

Step 2

Grate the two carrots using a coarse grater. Rinse the raisins. Chop the walnuts.

Step 3

In a mixer, combine the egg, both sugars, softened butter, and vanilla extract until smooth. Then fold in the grated carrots, raisins, and chopped walnuts. Add the flour mixture to this mass and mix well.

Step 4

Preheat the oven to 375°F. Line two baking sheets with parchment paper and drop two teaspoons of dough for each cookie onto the sheets, leaving a five-centimeter gap between them. Bake until done, about 12–16 minutes. Remove the cookies from the oven and let them cool completely.

Step 5

While the cookies are cooling, prepare the filling: mix the cream cheese and honey. Sandwich two cookies together with the cream filling in between.
