Carrot and Cilantro Soup
Ingredients
- Olive Oil 1 tablespoon
- Scallions 4 pieces
- Honey 1 teaspoon
- Turnips 10 oz
- Lemon 1 piece
- Chicken Broth 15 fl oz
- Cilantro 1 bunch
- Salt to taste
- Ground Black Pepper to taste
- Ciabatta 1 piece
Step-by-Step Guide
Step 1
Heat the olive oil in a pot. Add the chopped green onions and sauté for about a minute.
Step 2
Finely chop the carrots. Add them to the pot, along with the honey, squeeze in the lemon juice, and stir.
Step 3
Pour in the hot broth, bring to a boil. Increase the heat and quickly simmer for 5 minutes until the carrots are soft. Add the finely chopped cilantro leaves. Blend in a blender. Add seasonings to taste.
Step 4
Pour into soup bowls, drizzle with a little olive oil. Serve with warm focaccia.
