Caramelized Onion Pie with Cheese
Ingredients

- Egg white 3 pieces
- 10% cream 5 fl oz
- Gruyère cheese 5 oz
- Salt a pinch
- Olive Oil 1 teaspoon
- Red Grape Juice 5 fl oz
- Sugar 5 oz
- Puff Pastry 15 oz
- Herbs to taste
Step-by-Step Guide
Step 1
For the caramelized onions, peel, wash, and slice the onions into thin half-rings; separate the half-rings and add sugar or fructose (I use fructose), and a pinch of salt — mix everything gently with your hands. Just before placing the onions in the preheated oven, pour in the red wine and drizzle with olive oil. After 10 minutes, reduce the oven temperature significantly so that the onions just sizzle lightly in the wine. The caramelization process will take about 2 hours — so it's better to do this 'at your leisure' and use the preparation in the pie.
Step 2
For the base, make the dough you usually make or like. Or buy it from the store. Place the dough in a pie dish on a baking sheet and send it to the preheated oven for about fifteen minutes.
Step 3
For the filling, whisk three eggs, add the cream, and mix everything together. Grate the gruyere cheese and add it to the mixture (or you can skip this step and sprinkle it on top later — then the cheese crust will be more pronounced, but the cheese won't blend with the onions inside). You can add your favorite spices (I add marjoram).
Step 4
In the partially baked pie crust, layer the onions and evenly pour the mixture over them, then sprinkle with cheese (if it’s not already in the mixture).
Step 5
Bake for 15–20 minutes. Serve warm.
