Ingredients
- Granulated sugar 5 oz
- Water 5 fl oz
- Meyer Lemon Juice 0 fl oz
Step-by-Step Guide
Step 1
In a heavy-bottomed saucepan or a copper skillet, add the sugar and pour in 60 ml of water. Melt over low heat, stirring gently with a wooden spoon. Add about 12 drops of lemon juice and bring to a vigorous boil. As the mixture begins to darken, move the saucepan to ensure even coloring.
Step 2
Once the caramel reaches a light mahogany color, pour in 30 ml of hot water, move the saucepan, add another 30 ml of water, and stir. The mixture should be liquid; it will harden as it cools.
