Caramel Flan
Ingredients
- Sugar 1½ glasses
- Chicken Egg 8 pieces
- Milk 4 glasses
- Vanillin 1 tablespoon

Step 1
Preheat the oven to 355°F. Lightly beat the eggs. In a large saucepan, melt half a cup of sugar over medium heat and let it cook, without stirring, for twelve to thirteen minutes, until it develops a rich brown color. Carefully pour the caramel into a 25 cm diameter mold. Allow the caramel to spread evenly across the bottom. Place the mold in a deep baking tray.
Step 2
Beat the remaining sugar with the eggs until thick, then add the milk and vanilla. Mix thoroughly. Pour the mixture into a baking dish. In a larger baking pan, pour in boiling water so that the smaller dish is submerged about halfway. Bake for about one and a half hours, until the flan is set but still maintains a delicate consistency. Remove the dish from the oven and let it cool on a rack. Then chill for two hours (or better yet, refrigerate overnight). Before serving, invert the dish onto a wide plate, slice the flan, and drizzle with the caramel from the bottom.
