Caramel Chocolate Layered Pudding
Ingredients
- Sugar 5 oz
- Water 0 fl oz
- 33% Cream 10 fl oz
- Milk 25 fl oz
- Corn Starch 0 oz
- Vanilla salt 1½ teaspoons
- Farm fresh eggs 2 pieces
- Salt ¼ teaspoon
- Liquid dark chocolate 0 oz
Step-by-Step Guide
Step 1
In a skillet, combine water and 150 g of sugar. Heat over high heat, stirring with a fork until the sugar dissolves. Then cook without stirring until it reaches a caramel color for 4–5 minutes. Finish cooking by gently shaking the skillet to achieve a uniform caramel for 1–2 minutes. Remove from heat and carefully stir in the cream. Return to heat and mix until the mixture is smooth.
Step 2
Combine 120 ml of milk and cornstarch. In another bowl, whisk the eggs with vanilla and salt.
Step 3
Add the remaining 600 ml of milk to the caramel and bring to a boil, whisking constantly. Then incorporate the cornstarch mixture into the caramel. Bring to a boil again, whisking continuously, and cook for 2 minutes while whisking.
Step 4
Add about 240 ml of the caramel mixture to the beaten eggs, mix well, and pour everything back into the caramel. Whisk for another minute off the heat.
Step 5
Add the chopped chocolate to 120 ml of the caramel and stir until smooth.
Step 6
Divide the chocolate caramel into 6 glasses or dessert bowls, then layer with the plain caramel mixture, followed by another layer of chocolate. Chill for 3 hours. Garnish with chocolate crumbs.
