Caramel Apple Cheesecake
Ingredients
- Yubileynoye Cookies 15 oz
- Butter 5 oz
- Sugar 5 oz
- Cream 22% 5 fl oz
- Apple 2 pieces
- Powdered Sugar ½ cup
- Ricotta cheese 20 oz
- Cottage cheese 10 oz
- Vanillin ¼ teaspoon
- Chicken Egg 3 pieces
Step-by-Step Guide
Step 1
Preparing the crust. Preheat the oven to 340°F. Crush the cookies in a food processor. Add 170 grams of room temperature butter and 2 tablespoons of sugar, and blend again. Distribute the mixture in a 26 cm diameter springform pan (bottom and sides about 4 cm high). Place in the oven for 10 minutes. Remove from the oven and let cool.
Step 2
Preparing the caramel apple layer. Peel the 2 apples and cut them into small thin slices. Arrange the apples on the slightly cooled crust. For the caramel, melt the remaining sugar over medium heat until fully caramelized. Stirring constantly, add the remaining butter (30 grams) and gradually pour in the boiled cream. Pour the caramel mixture over the apples.
Step 3
Preparing the cream. In a large bowl, mix the cottage cheese, ricotta, vanillin, and powdered sugar (to taste) until smooth. Add the eggs and mix well again. Pour the mixture over the apples in caramel. Cover the pan with parchment paper and place it in the preheated oven at 300°F for 50 minutes.
Step 4
Let the cheesecake cool for 4 hours.
