Description

Tip - you can easily peel almonds by soaking them in boiling water for 10 minutes.

  • Chopped almonds 10 oz
  • Sugar 10 oz
  • Butter 0 oz
  • Wheat Flour 15 oz
  • Activated Baking Soda 0 oz
  • Farm fresh eggs 3 pieces
  • Vanilla salt 0 oz
  • Lemon 1 piece

Step-by-Step Guide

Step 1

Toast the peeled almonds in a dry skillet.

Step 2

Whip the egg whites with a pinch of salt until stiff peaks form.

Step 3

Mix the egg yolks with sugar and vanilla sugar.

Step 4

Gradually add the egg whites to the yolk mixture, gently folding them together.

Step 5

Add the almonds and grated lemon zest, and mix well.

Step 6

Add the baking powder (or baking soda mixed with lemon juice) and flour (sifted beforehand). Mix well. If the dough is too soft, add more flour. The dough should not stick to your hands and should not be too dense.

Step 7

Preheat the oven to 345°F.

Step 8

Shape the dough into 2-3 logs with a diameter of 2 cm and place them on a baking sheet greased with butter. Beat the yolk with a little sugar and brush the logs.

Step 9

Place the baking sheet in the preheated oven for 35 minutes. While still hot, cut the logs into 1 cm thick pieces (as it will be impossible to do once they cool, the cookies will crumble instead of cutting).
