  • Ricotta cheese 5 oz
  • Mascarpone Cheese Unagrande 0 oz
  • Vanilla extract ¼ teaspoon
  • Powdered Sugar ½ cup
  • Orange zest ½ teaspoon
  • Sponge Cake Base 15 oz
  • Pistachios 2 tablespoons
  • Fresh Berries 5 oz

Step-by-Step Guide

Step 1

Place the ricotta in several towels and gently squeeze out the excess moisture. Transfer to a bowl and mix.

Step 2

Add the mascarpone, sugar, vanilla, and grated zest. Mix well and add the pistachios.

Step 3

Cut the sponge into small pieces and toast in the oven at 375°F for 2 minutes.

Step 4

On each sponge, place a small amount of the prepared cream and top with berries.
