Candied Oranges with English Custard

Ingredients

  • Water 5 fl oz
  • Oranges 2 pieces
  • Sugar 20 oz
  • Whole egg 6 pieces
  • Milk 15 fl oz
  • Vanilla salt 1 piece
  • Coconut Liqueur to taste

Step-by-Step Guide

Step 1

Preheat the oven to 210°F. Boil the water and dissolve the sugar in it. Slice the oranges into rounds and place them in a heatproof dish, then pour the resulting sugar syrup over them. Place in the oven for one and a half hours, then cool.

Step 2

Make the custard. To do this, whisk the sugar with the egg yolks. Boil the milk with the vanilla pod. Pour the milk into the egg and sugar mixture and whisk. Transfer to a saucepan, place over low heat, and cook, stirring, until the mixture slightly thickens. Remove from heat and add the liqueur. Strain and transfer to a sauceboat.

Step 3

Serve together with the candied oranges.
