Candied Oranges in Dark Chocolate

Ingredients

  • Sugar 35 oz
  • Oranges 35 oz
  • Water 25 fl oz
  • Chocolate 53% 35 oz

Step-by-Step Guide

Step 1

Prepare a sugar syrup from water and sugar, boil for about 20–30 minutes.

Step 2

Add sliced oranges, with seeds removed, to the syrup.

Step 3

Cook for about 1–1.5 hours, occasionally stirring gently (to ensure the top oranges are at the bottom of the pot, while trying not to damage the flesh of the oranges), until the syrup thickens. The white part of the orange peel should become semi-transparent by this point.

Step 4

Lay the rings in a single layer on baking paper and allow to dry.

Step 5

Temper 800–1200 g of dark chocolate.

Step 6

For further manipulations, it is advisable that the room temperature does not exceed 70°F, or the oranges should be stored in the refrigerator in small batches. Dip the oranges one by one in the chocolate, allowing excess to drip off (the thinner the layer of chocolate, the better), and place them in a single layer on baking paper to let the chocolate set.
