Step 1

First, remove the ends of the oranges. Then, peel them in strips from one cut end to the other. Boil the peels in boiling water for a few minutes, then drain the water and boil again. This is necessary to remove the bitterness.

Step 2

Next, make a syrup by mixing equal parts sugar and water, and cook the peels in it for about an hour.

Step 3

Cool the peels on a rack to let excess liquid drain off.

Step 4

Melt the chocolate in a double boiler until fully dissolved. Dip the candied peels into it, place them on parchment paper, and wait for the chocolate to set again.
