
Candied Orange Peels in Chocolate

It is important to use pure chocolate, do not add any oils or creams!
Ingredients
- Sugar 5 oz
- Chocolate 5 oz
- Orange zest 3 pieces
Step-by-Step Guide
Step 1
Wash the peels and cut them into strips about half a centimeter wide, boil in water for 10 minutes. Drain, rinse well under running water while rubbing with your hands, and drain again.
Step 2
Repeat this process 3 times. On the last boil, cook until soft.
Step 3
Place the boiled peels in a pot, sprinkle with sugar, and let sit for several hours or overnight. A syrup will form.
Step 4
On low heat, cook the peels until they are transparent, until a drop of hot syrup, when dropped in water, does not spread but remains a soft ball.
Step 5
Remove the peels, lay them out separately on a tray, and let them dry. This will take about 1 day. Melt the chocolate in a water bath, dip the peels in the chocolate, and place them on parchment paper to cool.
