Candied Lemon Zest
Ingredients
- Lemon 6 pieces
- Sugar 20 oz
Step-by-Step Guide
Step 1
Using a fruit knife, cut the zest from the lemons into strips, then remove the white part from the inside with a knife.
Step 2
In a saucepan, bring 1 liter of water to a boil, add the zest, and boil for 1 minute. Drain and rinse under cold water.
Step 3
In a saucepan, combine 480 ml of water and 400 g of sugar. Bring to a boil and cook for 2 minutes, stirring until the sugar dissolves. Add the zest, reduce the heat, and simmer for about 30 minutes until translucent. Remove from heat and let the zest cool in the syrup.
Step 4
Remove the zest from the syrup and dry well (it’s best to leave it to dry on a rack overnight), then roll in the remaining sugar.
