Ingredients
- Sugar 15 oz
- Grated Ginger Root 10 oz
- Salt a pinch
Step-by-Step Guide
Step 1
Slice the ginger into thin pieces. Place in a small pot, cover with water, and bring to a boil.
Step 2
Reduce the heat and simmer for 10 minutes, then drain the water and repeat the process: cover with cold water, bring to a boil, and simmer for 10 minutes.
Step 3
Mix sugar, 500 ml of water, and a pinch of salt. Add the ginger slices and cook until the syrup reaches a temperature of 105°C (the consistency of liquid honey). Remove from heat.
Step 4
Drain the syrup while the ginger is still hot, and roll the slices in sugar. Then, dry them on a rack.
