Description
The water in which the ginger was boiled can be used to make ginger tea. But be careful — the syrup is very spicy.
Ingredients
- Sugar 5 oz
- Water 20 fl oz
- Grated Ginger Root 5 oz
Step-by-Step Guide
Step 1
Peel the ginger root using any convenient method (vegetable peeler, knife, teaspoon).
Step 2
Slice it thinly into rounds or long pieces. You can use a mandoline.
Step 3
Place the ginger in a pot and cover with 625 ml of water (the water should completely cover the ginger) and boil for 1 hour. The ginger will become softer and lose its intense spiciness.
Step 4
Make the syrup: dissolve the sugar in 125 ml of water and bring to a boil.
Step 5
Drain the boiled ginger in a colander and let the excess liquid drip off.
Step 6
Place the ginger slices in the sugar syrup.
Step 7
Cook over high heat until the ginger absorbs the sugar and becomes translucent.
Step 8
Carefully (very hot) coat the ginger pieces in sugar (for this, take an additional amount of sugar, as it is not specified in the ingredients).
Step 9
Lay them out on paper to dry for 10–15 minutes.
Step 10
Transfer the finished ginger to a jar.
