Step-by-Step Guide
Step 1
Preheat the oven to 340°F and line the baking pans with parchment paper.
Step 2
In a stand mixer fitted with a paddle attachment, use a hand mixer to combine the butter (110 g), sugar (380 g), and dry ingredients until the mixture resembles coarse sand, with no large pieces of butter.

In a large pitcher, stir together the buttermilk and eggs with a spoon.

Start the mixer on medium speed and gradually pour the liquid mixture into the dry ingredients. Scrape down the sides of the bowl as needed. Mix until smooth and well combined.

Crumble the cookies until there are no large pieces, and mix them into the prepared batter with a spoon. Divide the batter evenly among the prepared molds.
Step 6
For the frosting, using a stand mixer with a paddle attachment or a hand mixer on low speed, gradually combine the powdered sugar and butter until the mixture is almost smooth, with no large chunks of butter. Add one third of the mascarpone and mix, then gradually incorporate the remaining mascarpone. Once the mixture is smooth, increase the speed and whip until it becomes light and fluffy.
Step 7
Once the cake layers have completely cooled, assemble the cake. Place the first layer on a plate or cake stand and spread 3–4 tablespoons of frosting on top. Smooth it out with a spatula, adding more frosting if necessary. Sprinkle with cookie crumbs.
Step 8
Place the second cake layer on top and repeat the process of covering with frosting and cookie crumbs. Add the third cake layer. Evenly cover the top of the cake with frosting and large pieces of cookie.
