Cake in White Glaze with Red Currants
Ingredients
- Wheat Flour 2¼ cups
- Baking Powder 2½ teaspoons
- Salt 1 teaspoon
- Butter 5 oz
- Sugar 2 cups
- Egg white 2 pieces
- Milk 0.6 cups
- Vanilla salt 4 teaspoons
- Water ¼ cup
- Egg white 2 pieces
- Cream of tartar ½ teaspoon
- Red Currant to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease 2 round pans, 20 cm in diameter, with butter.
Step 2
Mix the flour, baking powder, and salt. Beat the softened butter with 1.25 cups of sugar until creamy. Add the eggs one at a time, beating well after each addition. Add the milk and half of the vanilla, then mix with the flour mixture. Stir well.
Step 3
Pour the batter into the prepared pans and bake for 20–30 minutes until done. Cool for 10 minutes and remove from the pans. Allow to cool completely.
Step 4
Meanwhile, mix the remaining sugar, water, egg whites, cream of tartar, and a pinch of salt and place over a water bath. Whip with a mixer for 5–7 minutes.
Step 5
Remove from heat and continue to whip the glaze for a while longer. Add the vanilla and mix well.
Step 6
Spread glaze on one layer and place the second layer on top. Gently press down and cover the top evenly with glaze, then frost the sides. Decorate with red currants.
