Buns with Parmesan, Prosciutto, and Pine Nuts

Ingredients

  • Wheat Flour 20 oz
  • Salt to taste
  • Water 10 fl oz
  • Semolina 0 oz
  • Olive Oil 0 fl oz
  • Cheese Spread 5 oz
  • Pistachios 5 oz
  • Dry yeast 0 oz
  • Olive Oil 2 tablespoons
  • Corn Flour for Polenta 1 tablespoon
  • Prosciutto 12 pieces

Step-by-Step Guide

Step 1

Mix the flour with semolina, rub in the yeast until it forms a fine crumb. Add salt, olive oil, and water. Place the dough on a surface and knead. Form into a ball and let the dough rest for 1 hour.

Step 2

Grate the Parmesan cheese.

Step 3

Toast the pine nuts in the oven or under the broiler. Let cool and mix with the cheese.

Step 4

Preheat the oven to 480°F.

Step 5

Dust the work surface with corn flour. Place the dough and shape it into a rectangle with your hands. Brush with olive oil.

Step 6

Spread the cheese and nut mixture over the surface of the rectangle, then layer the slices of prosciutto on top. Brush the prosciutto with olive oil and sprinkle with the remaining cheese and nuts.

Step 7

Roll the dough into a log and seal the seam by pressing it with your fingers. Cut into slices about 2 cm thick and place the resulting rounds on a greased baking sheet.

Step 8

Cover with a towel and let rise for 45 minutes.

Step 9

Place the buns in the oven, reduce the temperature to 430°F, and bake for 12 to 15 minutes until golden brown.

Step 10

Brush the finished buns with olive oil.
