Buns with Black Currants and Whipped Cream
Ingredients
- Wheat Flour 15 oz
- Cream of tartar 3 teaspoons
- Activated Baking Soda 1½ teaspoons
- Spices 1 teaspoon
- Brown Sugar 2 teaspoons
- Butter 0 oz
- Milk 5 fl oz
- Cream 5 fl oz
- Frozen black currant puree 5 oz
- Whipped Cream to taste
- Jam to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F. Grease a baking sheet with butter.
Step 2
Sift the flour, baking soda, cream of tartar, spices, and sugar into a large bowl. Cut the butter into cubes and mix it into the flour mixture with your hands until it resembles breadcrumbs. Add the cream, milk, and black currants, and knead well. If the dough is too runny, add more flour.
Step 3
Transfer the dough to a floured surface. Roll the dough into a ball and then roll it out with a rolling pin to a thickness of 2 cm. Use a round cutter to cut out circles with a diameter of 6 cm.
Step 4
Place the buns on the baking sheet, lightly brush the tops with milk, and sprinkle with sugar. Bake for 10–12 minutes until golden brown. Transfer to a plate and cover with a towel. Serve warm with jam and whipped cream.
