Ingredients
- Liquid dark chocolate 5 oz
- Butter 5 oz
- Brown Sugar 10 oz
- Farm fresh eggs 4 pieces
- Wheat Flour 5 oz
- Walnuts 5 oz
- Strawberry 5 oz
- Raspberry leaves 5 oz
- Chocolate 5 oz
- Cream 22% 5 fl oz
Step-by-Step Guide
Step 1
Break the chocolate into pieces and melt it together with the cubed butter in a water bath, stirring continuously with a silicone spatula until smooth. Set the resulting chocolate sauce aside to cool to a warm state.
Step 2
While the sauce is cooling, crack the eggs into a bowl (preferably slightly chilled) and whisk until frothy, gradually adding the brown sugar (200 g). It is best to whisk with a mixer for five minutes.
Step 3
Chop the walnuts in a blender or cut them into small pieces with a sharp knife.
Step 4
Gradually mix the sugar (50 g) and chopped nuts into the cooled chocolate sauce using a silicone spatula. Then, sift the flour through a small sieve and incorporate it into the sauce.
Step 5
Pour the chocolate mixture into the bowl with the whipped eggs and gently stir with a spatula until the batter is a uniform color.
Step 6
Line a baking pan with parchment paper and pour the batter into the pan. Then place it in a preheated oven at 390°F for 30 minutes.
Step 7
Remove from the oven and let it cool. Meanwhile, melt the milk chocolate with the nuts in a water bath and gradually add the cream, stirring constantly.
Step 8
Drizzle the brownies with the glaze and decorate with berries. Let it cool a bit more and then place it in the freezer for 10 minutes.
