Brownies with Cream Cheese Filling
Baking and Desserts • American
Description
If you melt the chocolate and butter not in a water bath, the mixture will thicken and may overcook. The key is not to overdo it; if a toothpick comes out dry or with small crumbs, turn it off immediately.
Ingredients
- Liquid dark chocolate 5 oz
- Butter 5 oz
- Sugar 5 oz
- Chicken Egg 5 pieces
- Wheat Flour 5 oz
- Semi-soft cream cheese 20 oz
- Baking Powder 0 oz
Step-by-Step Guide
Step 1
Bring water to a boil in a large pot.
Step 2
Cut the butter into pieces, break the chocolate, and place them in a heatproof bowl or saucepan.
Step 3
As soon as the water boils, remove the large pot from the heat and place a smaller pot inside it, ensuring that no water gets into the chocolate. Stir until you achieve a smooth, homogeneous mixture that should have the consistency of very thin kefir or even milk. Allow the mixture to cool.
Step 4
In another bowl, whisk together 3 eggs and 130 grams of sugar. Add the cooled chocolate mixture and mix well. Sift in the flour combined with baking powder, and stir thoroughly.
Step 5
In a separate bowl, beat the cream cheese, 2 eggs, and 70 grams of sugar.
Step 6
Grease a baking dish with oil or line it with parchment paper. Pour in the chocolate batter, reserving a couple of tablespoons, and smooth it out.
Step 7
Spread the cheese mixture on top without mixing. Also, smooth it out.
Step 8
Spread the remaining chocolate batter on top. Swirl with a fork to create a marbled pattern.
Step 9
Bake for 30–40 minutes at 355°F.
