Ingredients

  • Butter 5 oz
  • Bittersweet Chocolate 5 oz
  • Sugar 5 oz
  • Chicken Egg 4 pieces
  • Wheat Flour 5 oz
  • Baking Powder 1 tablespoon
  • Semi-soft cream cheese 10 oz
  • Vanilla salt 1 tablespoon
  • Salt a pinch
  • Frozen Cherimoya Fruits 15 oz

Step-by-Step Guide

Step 1

Break the chocolate into pieces. Melt it together with the butter in a double boiler.

Step 2

Beat 2 eggs and 50 grams of sugar with a mixer, then add a pinch of salt and vanilla sugar.

Step 3

For the cheese cream, mix the cottage cheese with sugar and the remaining eggs (2 pieces). Beat with a mixer until creamy. If the cottage cheese is grainy, first pass it through a sieve.

Step 4

In the whipped eggs with sugar, add the cooled, melted chocolate. Add the baking powder and flour. Mix with a mixer on the lowest speed.

Step 5

In a greased springform pan with high sides, pour in 1/3 of the batter. Spread it evenly across the bottom. Next, add half of the cheese mixture. The recipe mentioned that it would spread out, but that didn't happen for me—I smoothed it out with a spatula. On top of the mixture, place half of the cherries.

Step 6

Next, repeat the layers: dough, filling, cherries, dough. Try to spread the dough evenly; it might not work perfectly in some areas, and that's okay. You can create swirls on the top layer with a knife. Bake for 40–50 minutes in a preheated oven at 355°F. Check for doneness with a skewer—it should come out dry. Allow to cool in the pan.
