
Brownies with Cocoa, Nuts, and Mascarpone

Description
Possible deviations from the recipe: you can omit the maple syrup, in which case increase the granulated sugar to 1 cup. Follow the recipe strictly, don’t worry, the brownies won’t be too sweet. Walnuts can be replaced with pecans. Mascarpone cheese can be substituted with any soft unsalted cream cheese. Instead of decorating with chocolate chips, you can grate dark chocolate on top.

- Chicken Egg 4 pieces
- Granulated sugar ¾ cup
- Brown Sugar 1 cup
- Maple syrup 3 tablespoons
- Butter 10 oz
- Cocoa Powder 1¼ cups
- Vanilla extract 3 teaspoons
- Salt ½ teaspoon
- Wheat Flour ½ cup
- Mascarpone Cheese Unagrande 5 oz
- Mini Chocolate Chips 6 pieces
- Powdered Sugar ½ cup
- Walnuts 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 345°F.
Step 2
Grease the baking pan with butter and dust with flour (use additional flour and butter beyond the amount specified in the recipe). I used a 26 cm round pan. A square pan can also be used, as brownies are traditionally served in square pieces.
Step 3
Using a mixer, beat 4 large chicken eggs in a high bowl until light yellow foam forms. If the eggs are medium or small, use 5.
Step 4
Gradually add the granulated sugar, brown sugar, salt, and maple syrup while continuously mixing with the mixer. If you don’t have maple syrup, it can be replaced with agave syrup or omitted altogether. In this case, use 1 cup of granulated sugar + 1 cup of brown sugar.
Step 5
Remove the mixer. Add the cocoa powder, mixing thoroughly with a spatula. Add the flour and melted but not hot butter. Then add 2 teaspoons of vanilla extract. Mix well, but do not beat.
Step 6
Chop the walnuts coarsely. Add them to the batter.
Step 7
Pour the batter into the pan. Place in the oven for 45–50 minutes. After the time is up, turn off the oven and let it cool for 5 minutes. Then remove the brownies from the oven and let them cool completely. Despite the temptation, do not cut the brownies until they are completely cooled.
Step 8
In the meantime, mix the mascarpone with the powdered sugar and 1 teaspoon of vanilla extract.
Step 9
Spread the cream cheese mixture over the top of the cooled brownies, decorating with chocolate chips.
