Broccoli Soup with Sesame and Ginger
Ingredients
- Broccoli florets 30 oz
- Fresh Ginger Root 1 piece
- Salt 1 teaspoon
- Tamari sauce 2 tablespoons
- Sesame Oil 1 tablespoon
- Pickled Ginger 0 oz
- Toasted sesame seeds 1 tablespoon
- Marinade 1 tablespoon
Step-by-Step Guide
Step 1
The combination of ginger, sesame, and tamari sauce transforms a regular broccoli soup into an Asian dish.
Step 2
Set aside 2 cups of the smallest broccoli florets.
Step 3
Bring 8 cups of water with fresh ginger and salt to a boil in a large pot. Add the remaining 8 cups of broccoli; cook for 5–7 minutes until the broccoli florets turn light green and become tender.
Step 4
Transfer the broccoli to a blender, discarding the ginger. Carefully add the cooking water, tamari, oil, pickled ginger, and marinade to the blender. Blend until smooth.
Step 5
Pour the soup back into the pot and heat over low heat. Add the remaining 2 cups of broccoli florets, simmer the soup on low for 5–7 minutes until the broccoli softens. Season with salt and pepper to taste. Serve with pickled ginger and sesame seeds.
