Broccoli Soup with Brie Crostini
Ingredients
- Olive Oil 3 tablespoons
- Onion 1 head
- Chicken Broth 15 fl oz
- Broccoli 10 oz
- French Baguette 1 piece
- Garlic 2 cloves
- Brie cheese 5 oz
- Chopped Sage Leaves 1 tablespoon
- Cream 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill. In a pot, heat 1 tablespoon of olive oil. Sauté the onion in a pan for no more than three minutes.
Step 2
Pour the broth into the pot and add the broccoli. Bring to a boil, then reduce the heat and cook for 4–6 minutes until the broccoli is tender but retains its color.
Step 3
Meanwhile, make the crostini with brie. Slice the baguette diagonally into thin pieces and place them on a baking sheet. Lightly brush with olive oil and add more spices. Toast on both sides until golden brown and remove from heat. Rub with garlic, top with pieces of brie cheese, and sprinkle with ground black pepper. Place under the grill until the cheese bubbles.
Step 4
Transfer the soup to a blender, add the seasonings, and blend until smooth. Optionally, you can add cream. Sprinkle with finely chopped parsley and pour into soup bowls. Serve the crostini with brie on appetizer plates.
