Ingredients
- Onion 1 head
- Vegetable Oil 1 tablespoon
- Garlic 2 cloves
- Chicken Broth 4 cups
- Broccoli 1 head
- Canned Baby Beets 20 oz
- Dijon Mustard 2 tablespoons
- Cheshire Cheese 2 cups
Step-by-Step Guide
Step 1
In a pot, heat the vegetable oil and sauté the finely chopped onion until soft for 5-7 minutes. Add the minced garlic and sauté for another minute.
Step 2
Add the broth, beans, and half of the chopped broccoli.
Step 3
Bring to a boil, reduce the heat, and cook until the broccoli is tender for 15-20 minutes. Blend until smooth.
Step 4
Return to heat, add the remaining chopped broccoli, and cook until tender for 2-4 minutes.
Step 5
Add the cheese and let it melt, stirring.
