Broccoli Cream Soup with Mint

Ingredients

  • Broccoli 15 oz
  • Shallot 0 oz
  • Chicken Broth 10 fl oz
  • Garlic 1 clove
  • Bay leaf 1 piece
  • Basil 0 oz
  • Mint 0 oz
  • 33% Cream 5 fl oz
  • Lemon ½ piece
  • Olive Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cut the broccoli into large pieces and add it to the broth, bring to a boil and cook for 3–4 minutes.

Step 2

Meanwhile, chop the shallot coarsely and sauté with the bay leaf in olive oil over medium heat for 3 minutes until softened, then add to the soup and cook for another minute.

Step 3

Set aside 2 mint tops for garnish; separate the basil and mint leaves from the stems, finely chop the garlic.

Step 4

Add the cream to the soup and simmer over medium heat for another 2 minutes, remove the bay leaf, add the garlic, and take off the heat.

Step 5

Add the basil and mint leaves to the pot and blend the contents with an immersion blender until smooth for 3–4 minutes, season with salt and pepper.

Step 6

Pour the puree into bowls, adding a few drops of lemon juice to taste.

Step 7

Garnish the puree with mint tops and serve.
