Breadsticks with Olives, Herbs, and Pecorino
Ingredients
- Wheat Flour 10 oz
- Salt to taste
- Water 5 fl oz
- Olives stuffed with lemon 5 oz
- Cheese Spread 0 oz
- Dry yeast 0 oz
- Corn Flour for Polenta 1 tablespoon
- Herbes de Provence to taste
Step-by-Step Guide
Step 1
Rub the yeast into the flour until a uniform crumb forms. Add salt, then water. Knead the dough for 2 to 3 minutes until it starts to come together. Leave it for 1 hour to rise.
Step 2
Cut each olive into 3 pieces. Mix with grated cheese and herbs de Provence.
Step 3
Place the dough on a surface dusted with corn flour and roll it out to a thickness of 2 cm. Sprinkle with the cheese and herb mixture and olives, pressing the filling in. Roll the dough into a flat log, press it down, and cut into 10 pieces about 1 cm wide. Twist the sticks a few times, dust with corn flour, and place on a baking sheet lined with parchment paper. Cover with a towel and leave for 30 minutes.
Step 4
Preheat the oven to 430°F, place the baking sheet in the oven, and bake for 10 minutes.
