Bread with raisins, hazelnuts, and shallots
Ingredients
- Wheat Flour 10 oz
- Wheat Flour 5 oz
- Water 10 fl oz
- Salt to taste
- Butter 0 oz
- Dry yeast 0 oz
- Shallot 5 oz
- Vegetable Oil 0 fl oz
- Hazelnut 5 oz
- Raisins 5 oz
- Honey 1 teaspoon
Step-by-Step Guide
Step 1
Chop the shallots and sauté in a mixture of vegetable and butter until soft. Add the chopped hazelnuts, stir, and cook for 1 minute. Then add the rinsed raisins and sauté for another 30 seconds.
Step 2
Mix both types of flour, rub in the yeast until crumbly. Add salt, water, honey, and the previously sautéed mixture, and knead the dough. Form the dough into a ball, cover, and let it rest for 45 minutes.
Step 3
Place the dough on a surface, reshape into a ball, and cover, letting it rest for another 45 minutes.
Step 4
On a floured surface, shape the dough into 2 loaves. Place them seam-side down on a baking sheet lined with a towel and dusted with flour, and let them rest for 1 hour.
Step 5
Preheat the oven to 480°F.
Step 6
Transfer the loaves onto an inverted baking sheet and make a long cut along the top with a sharp knife, about 5 mm deep.
Step 7
Spray the oven walls with water from a spray bottle, place the loaves inside, and bake for about 30 minutes.
