
Bread with Pistachios and Ramps

You can add 2 teaspoons of salt if using unsalted pistachios; otherwise, use 1 teaspoon.
Ingredients

- Ramps 0 oz
- Water 1½ cups
- Sugar 1 teaspoon
- Coarsely Ground Rye Flour 20 oz
- Salt 2 teaspoons
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
In a food processor, chop the nuts and finely chopped ramps.
Step 2
In a bowl, mix slightly warm water, yeast, and sugar. Let it sit for 15 minutes.
Step 3
In another bowl, mix the flour and salt. Then add the yeast mixture and the ramps with nuts. Knead the dough for at least 10 minutes, as this affects the bread's fluffiness. Then place the dough in a warm place for 1.5 hours to rise (the dough should double in size).
Step 4
Preheat the oven to 390°F.
Step 5
Grease a bread pan with oil, place the dough in it, cover, and let it rest for another 30 minutes.
Step 6
Bake for 45–50 minutes until done, checking with a toothpick. Immediately remove from the pan and let cool.
