Bread with Dried Apricots and Seasoning
Ingredients
- Toasted Sesame 1 tablespoon
- Chickpea 15 oz
- Garlic 1 clove
- Meyer Lemon Juice 2 tablespoons
- Cilantro 1 tablespoon
- Olive Oil 5 fl oz
- Scallions 4 stalks
- Red Curry Powder ½ teaspoon
- Wheat Flour 5 oz
- Baking Powder 1 teaspoon
- Dried Apricots 4 pieces
- Citrus Zest Mix 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat a grill pan. In a convenient bowl, mix finely chopped green onions, chopped dried apricots, add curry powder, sifted flour, baking powder, and lemon zest. Add seasonings to taste. Make a well in the center and pour in 4 tablespoons of drinking water. Knead the dough.
Step 2
Cut the dough into pieces and roll each into an oval. Drizzle with olive oil, place on the grill pan, and fry the pieces for 2–3 minutes on each side. Add more oil if necessary.
Step 3
To prepare the seasoning, toast the sesame seeds and transfer them to a blender. Add the chickpeas, minced garlic, lemon juice, and cilantro. Blend while gradually adding olive oil until a creamy mixture forms. Add salt and pepper to taste. Transfer to sauce dishes and place in the center of serving plates. Arrange the bread cut into thick strips around it.
