Bread with Cardamom and Prunes
Ingredients
- Unbleached flour crackers 10 oz
- Wheat Flour 5 oz
- Water 10 fl oz
- Salt to taste
- Prunes 5 oz
- Rum 4 teaspoons
- Dry yeast 0 oz
- Cardamom ¼ teaspoon
Step-by-Step Guide
Step 1
Soak the prunes in rum overnight.
Step 2
Mix both types of flour, add cardamom, and rub in the yeast until crumbly. Add salt, prunes, water, and knead the dough. Shape the dough into a ball, cover, and let it rest for 1 hour.
Step 3
Place the dough on a surface, reshape into a ball, and cover again for another 45 minutes.
Step 4
On a floured surface, divide the dough into 2 parts. Fold each part into thirds, sequentially tucking in the ends and sealing. Roll the dough lengthwise to form elongated loaves.
Step 5
Preheat the oven to 480°F.
Step 6
Line an inverted baking sheet with a towel, sprinkle with flour, and place the loaves on it. Make slashes on top, sprinkle with flour, cover, and let rise for 1 hour.
Step 7
Spray the oven walls with water, place the loaves inside, reduce the temperature to 430°F, and bake for 25–30 minutes.
