Ingredients
- Coarsely Ground Rye Flour 20 oz
- Millet 5 oz
- Olive Oil 1 tablespoon
- Sugar 1 teaspoon
- Salt 3 teaspoons
- Water 15 fl oz
- Dry yeast 0 oz
- Arugula 5 oz
- Dried Chamomile 1 tablespoon
Step-by-Step Guide
Step 1
In a large bowl, mix both flours, olive oil, salt, and the yeast mixture. Knead the dough for at least 10 minutes — this affects the bread's fluffiness. Cover the dough and let it rise for 1 to 1.5 hours.
Step 2
Meanwhile, chop the arugula with a sharp knife or in a food processor. Mix with thyme, then incorporate into the dough.
Step 3
Preheat the oven to 390°F.
Step 4
Grease a bread pan with oil. Place the dough in it, cover, and let it rest for 30 minutes.
Step 5
Bake for about 40 to 50 minutes until done, checking with a toothpick. Immediately remove from the pan and let cool.
Step 6
In a bowl, mix warm water, sugar, and yeast. Let sit for 10 to 15 minutes.
